1 tablespoon extra virgin olive oil
500g Alt Meat Co. Alternative Mince.
1 medium brown onion, finely chopped
1 medium carrot, finely diced
2 celery stalks, finely diced
2 garlic cloves, crushed
1 sprig fresh rosemary, finely chopped
1 tablespoon Worcestershire sauce (vegan friendly)
2 tablespoon tomato paste
¼ cup frozen peas
8 small slices toasted crusty bread
Fresh flat-leaf parsley leaves, to serve
1. Heat oil in a large non-stick frying pan over medium heat. Fry Alt Meat Co. Alternative Mince lightly for 10-12 minutes, gently stirring regularly until golden brown. Set aside for later.
2. In a separate non-stick frying pan, add onion, carrot and celery; cook, stirring occasionally, for 5 minutes or until softened. Add garlic and rosemary. Cook for 1 minutes or until fragrant. Combine with golden brown Alt Meat Co. Alternative Mince.
3. Add Worcestershire sauce, tomato paste and frozen peas. Season with pepper. Bring dish up to high heat, then reduce to simmer for 3-5 minutes or until peas are bright green and tender.
4. Serve mixture spooned over toasted crusty bread, sprinkle with parsley. Enjoy!
