RENDANG ROTI ROLL

INGREDIENTS

  • 2 Tbsp Vegetable Oil
  • 250ml Vegetable Stock
  • 200 g ALT MEAT CO. Beef Free Chunks Lightly Smoked
  • 2 Med Pre made roti bread
  • 1/4 Cup Rendang curry paste
  • 1/2 Cup Coconut cream
  • 1/2 Cup Sliced cucumber
  • 1/2 Cup Chopped tomato
  • 1/4 Cup Sliced red onion
  • 1/2 Cup Shredded lettuce
  • Pinch Salt & pepper
  • 2 tsp Lime juice
  • 1/4 Cup Chopped coriander
  • 2 Tbsp Crushed peanuts

INSTRUCTIONS

  1. Add oil and stock to pan, add ALT MEAT CO Beef free chunks and simmer for 3 minutes.
  2. Add the Rending paste and the coconut cream to the pan, stir and simmer for 4 minutes.
  3. Heat Roti bread in a separate pan for a minute on each side.
  4. To serve, make the roll by filling roti with rendang mixture followed by lettuce, tomato, onion and cucumber.
  5. Garnish with coriander, lime juice, peanuts, salt & pepper.
