RAINBOW BEEF FREE STIR FRY

INGREDIENTS

  • 200gm Beef Free Chunks
  • 1 tsp rice wine vinegar
  • 2 tbsp sweet soy sauce
  • 1 clove garlic
  • 1 tsp minced ginger
  • 1 tsp sesame seeds
  • 1 tbsp white sesame oil
  • ½ green capsicum
  • ½ yellow capsicum
  • ½ red capsicum
  • I stick of celery
  • 1 small orange carrot
  • 1 small purple carrot
  • 1 red onion
  • 1 bunch broccolini
  • 100 ml vegetable stock
  • ¼ bunch coriander

INSTRUCTIONS

  1. In a bowl, mix finely chopped garlic, ginger, sesame seeds, soy sauce and rice vinegar with the Beef Free Chunks. Set aside.
  2. Cut the capsicum, onion, celery and carrot into matchstick size pieces
  3. Heat the oil in a pan and on high heat, quickly fry all the vegetables, including the broccolini
  4. Add the marinated Beef Free Chunks, fry quickly for 30 seconds then add the vegetable stock
  5. Simmer for a further minute, toss the torn coriander throughout, and serve on rice or noodles
