PINEAPPLE CHICKEN ADOBO

INGREDIENTS

  • 200gm Chicken Free Strips
  • 1 small tin pineapple chunks in natural juice
  • 100ml coconut cream
  • 2 tbsp vinegar
  • ¼ tsp pepper
  • 1 bay leaf
  • 1 clove garlic
  • 1 tsp coconut oil
  • 2 tbsp light soy sauce

INSTRUCTIONS

  1. In a large bowl, combine Chicken Free Strips with vinegar, finely chopped garlic, the bay leaf and 2 tablespoons of pineapple juice. Set aside.
  2. Drain the remainder of the juice from the pineapple and pat the pieces dry with paper towel
  3. In a large frying pan, heat the coconut oil
  4. Fry pineapple in hot oil until lightly browned.
  5. Add the marinated Chicken Free Strips and fry lightly
  6. Add coconut cream and soy, simmer for two minutes
  7. Serve with rice
