INGREDIENTS

  • 200gm Chicken free strips
  • 1 tbsp white sesame oil or coconut oil
  • 1 golden shallot
  • 1 clove garlic
  • 1 tsp fresh ginger
  • 1 long red chilli
  • 1 tsp coconut sugar
  • 2 tbsp lime juice
  • 2 tbsp light soy sauce
  • 2 spring onions
  • ¼ cup mint leaves
  • ¼ cup basil leaves
  • ¼ cup coriander leaves
  • 1 Lebanese cucumber
  • 2 Iceberg lettuce cups
  • 2 tsp peanuts

INSTRUCTIONS

  1. Chop Chicken free strips in to pieces roughly the size of pumpkin seeds.
  2. Saute finely chopped shallot, garlic, ginger, chilli with the white part of the spring onions.
  3. Add Chicken free strips, lime juice and soy and fry lightly.
  4. Remove from heat and toss torn herbs and the green tops from the spring onions though the mix.
  5. Fill the lettuce cups with the mix and serve with the sliced cucumber.
