INGREDIENTS

  • 200gm Chicken free strips
  • 1 tbsp butter or coconut oil
  • 1 leek (white part only)
  • 1 garlic clove
  • 4 medium white button mushrooms
  • 1 peeled diced potato
  • ½ cup dry white wine
  • 200ml cream or coconut cream
  • 2 squares of puff pastry

INSTRUCTIONS

  1. Slice leek and mushrooms, and saute in butter/coconut oil with the chopped garlic and potato.
  2. When the leeks are soft, add the wine and simmer for one minute.
  3. Add Chicken free strips and cream/coconut cream and simmer gently until potato is soft. Add salt to taste.
  4. Cut the first piece of pastry and line individual pie cases; blind bake for 15mins while filling is cooling.
  5. Fill pie cases and top with remaining pastry.
  6. Bake for 25-30 mins at 180c.
  7. Serve with salad greens and chilli chutney as desired.
