
BEEF FREE CHILLI CON CARNE

INGREDIENTS
- 200gm Beef Free Chunks
- 1 onion
- 1 red capsicum
- 1 long red chilli
- 2 cloves of garlic
- 1 tbsp coconut oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tin red kidney beans
- 1 tin chopped tomatoes
- Salt to taste
INSTRUCTIONS
- In a small pot, lightly fry large diced capsicum and onion with finely chopped garlic and chilli, in the coconut oil.
- Add Beef Free Chunks and spices, and fry for one minute.
- Add drained and washed red kidney beans and the tin of tomatoes.
- Bring to boil, turn down and simmer gently for 15 mins, season to taste.
- Serve with rice or kick it up a notch, empty a packet of corn chips into a baking dish, sprinkle with grated tasty cheese, pour chill con carne over the top, sprinkle more cheese, bake for 7-10mins 180c, add guacamole, sour cream and jalapenos … Yum!
