BEEF FREE CHILLI CON CARNE

INGREDIENTS

  • 200gm Beef Free Chunks
  • 1 onion
  • 1 red capsicum
  • 1 long red chilli
  • 2 cloves of garlic
  • 1 tbsp coconut oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tin red kidney beans
  • 1 tin chopped tomatoes
  • Salt to taste

INSTRUCTIONS

  1. In a small pot, lightly fry large diced capsicum and onion with finely chopped garlic and chilli, in the coconut oil.
  2. Add Beef Free Chunks and spices, and fry for one minute.
  3. Add drained and washed red kidney beans and the tin of tomatoes.
  4. Bring to boil, turn down and simmer gently for 15 mins, season to taste.
  5. Serve with rice or kick it up a notch, empty a packet of corn chips into a baking dish, sprinkle with grated tasty cheese, pour chill con carne over the top, sprinkle more cheese, bake for 7-10mins 180c, add guacamole, sour cream and jalapenos … Yum!
