CHIPOTLE LOW CARB TACOS

- 1 Tbsp Sunflower oil
- 200g ALT MEAT CO. Beef free Strips Zingy Chipotle
- 100ml Canned crushed tomatoes
- 250 Vegetable stock
- 3 Tbsp Chipotle tomato based sauce, or 3 tsp of hot sauce
- 1/2 tsp Smoked paprika
- 1 tsp Brown sugar
- Pinch Salt & pepper
- 1/2 Med Diced Red onion
- 1 Large Diced Avocado
- 4 Large Lettuce cups (cos or iceberg)
- 4 tsp Sour cream (optional)
- ¼ cup Coriander chopped
- Juice of 1 Lime
- Heat oil in pan. add ALT MEAT CO. Beef free strips, vegetable stock, crushed tomatoes and chipotle sauce, smoked paprika, brown sugar and salt & pepper. Cover and simmer for 5 minutes until combined and hot. Allow to cool before placing on the lettuce.
- Wash Lettuce cups, layer with warm Beef free mixture, red onion, avocado.
- Garnish with coriander, lime juice and sour cream or dairy free alternative.
