CHIPOTLE LOW CARB TACOS

INGREDIENTS

  • 1 Tbsp Sunflower oil
  • 200g ALT MEAT CO. Beef Free Strips Zingy Chipotle
  • 100ml Canned crushed tomatoes
  • 250 Vegetable stock
  • 3 Tbsp Chipotle tomato based sauce, or 3 tsp of hot sauce
  • 1/2 tsp Smoked paprika
  • 1 tsp Brown sugar
  • Pinch Salt & pepper
  • 1/2 Med Diced Red onion
  • 1 Large Diced Avocado
  • 4 Large Lettuce cups (cos or iceberg)
  • 4 tsp Sour cream (optional)
  • ¼ cup Coriander chopped
  • Juice of 1 Lime

 

INSTRUCTIONS

  1. Heat oil in pan. add ALT MEAT CO. Beef free strips, vegetable stock, crushed tomatoes and chipotle sauce, smoked paprika, brown sugar and salt & pepper. Cover and simmer for 5 minutes until combined and hot. Allow to cool before placing on the lettuce.
  2. Wash Lettuce cups, layer with warm Beef free mixture, red onion, avocado.
  3. Garnish with coriander, lime juice and sour cream or dairy free alternative.
