BEEF FREE FAJITAS

INGREDIENTS

  • 200 gm Beef Free Chunks
  • 1 red capsicum
  • 1 green capsicum
  • 1 yellow capsicum
  • 1 red onion
  • 2 cloves garlic
  • ¼ tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp chilli powder (if desired)
  • 100ml vegetable stock
  • 2 tbsp E.V. Olive Oil
  • 1 tsp sea salt or to taste
  • 4 large tortillas

INSTRUCTIONS

  1. Heat olive oil in a large frying pan and add capsicum and onion, cut up into strips.
  2. Fry for two to three minutes, moving the vegetables around so that they cook evenly.
  3. Add finely diced garlic and spices and fry for a further minute
  4. Add Beef Free Chunks and toss through the vegetables before adding the vegetable stock. Simmer one minute. Finish with a squeeze of lime juice and the salt.
  5. Roll up into tortillas, and serve with avocado, Jalapenos, sour cream as desired
